SALMON, AVOCADO, ORANGE & HEMP SEED SALAD

Serves 4

300g quality salmon, steamed or baked (can substitute with smoked or canned salmon)
2 tbsp Thompson’s Hemp Seeds*
1 avocado, diced
1 blood orange, peeled and sectioned (can substitute with oranges or mandarins)
1 clove of garlic, crushed and finely chopped
Juice of ½ lemon
4 cups salad greens (rocket, kale, baby spinach, watercress etc.)
Salt & pepper to taste.

  • In a large bowl, pull apart the salmon with a fork, add in all remaining ingredients and Thompson’s Hemp Seeds. Toss well and serve.
