Raita is a cooling, yoghourt-based accompaniment to curries. There are differrent varieties of raita, both sweet and savoury. The type of yoghourt used in India is usually thicker than here so using a Greek Style yoghourt is better. This recipe is sufficient for six people.
2 tablespoons slivered almonds 3 tablespoons currants 200g Jalna Greek Style Natural or BioDynamic Yoghourt 200g light sour cream 1 tablespoon golden syrup 2 bananas, chopped 1/2 cup dessicated coconut
- Soak 1/3 of the almonds and all the currants in hot water for 10 minutes. Drain.
- Mix together all ingredients except remaining almonds.
- Toast the remaining almonds, sprinkle over the top.
