The whole family should enjoy this quick, easy meal from my book: Let’s Eat Right! For Families.
Approximately 4 serves
400g lean beef strips 1 cup thick teriyaki sauce 125g dried rice noodles 1 tablespoon oil 4 cups chopped vegetables (eg. cabbage, carrots, beans, snow peas, mini corn, red capsicum) 1 teaspoon sesame oil 2 green onions, sliced diagonally
- Pour half the teriyaki over beef and marinate for 15–30 minutes.
- Heat half the oil in wok or frypan and sauté beef until just cooked. Remove from pan and wipe with paper towel.
- Pour boiling water over noodles and stand 5–8 minutes or until soft. Drain.
- Heat remaining oil and sauté vegetables for 5 minutes, stirring occasionally. Add beef, noodles, remaining teriyaki, sesame oil and green onions and toss until heated through.
Serve with:
- Try a complete Asian theme with a Miso soup for starters and exotic fruit platter for dessert (hold the banana fritters!)
Alternatives:
- Switch rice noodles with low fat instant noodles or Hokkein noodles
- Double the noodle portion for active teens with higher carbohydrate requirements
- Increase the beef portion if you have anybody with high iron needs in the family
